It all started when…

I went on a trip to Israel and someone recommended a random hummus place in old Akko (Acre) called “Hummus S’aid”. At first, we had trouble finding the place and walked past it a few times. It was a hole in the wall, but the line was 20 people deep. We mistook the line for something else. The line moved quickly for as long as it was. There were two things on the menu “hummus” and “hummus with ful (fava beans)”. They still asked us what we wanted. “Hummus, of course”. He showed us to our seats and put down pickles and pita. In approximately 54 seconds, he brought the hummus. It was beige and looked wet; I was skeptical. I tore off a piece of pillowy pita and scooped a large chunk of hummus. My first bite was like entering a new world. I looked at my wife (we had just married and were on our honeymoon) and asked, “What is this?!” In Hebrew, Mazeh means, “What’s this?”. Also mezze in Turkish means appetizer and sometimes includes hummus. I hope to share this experience with you here at home.
